Dinner: Simple additions for a balance meal…

IMG_3132.JPGI love a well prepared meal, but sometimes there ain’t the time, or the resources! Take tonight for example, a packet of soup was on the menu ~ Thai chicken to be exact, I bought it a few days ago in case of such emergencies… I tend to be pretty religious about reading the back of the packet, the less ingredients the better, and I like to make sure that they haven’t added silly amounts of sugar, as seems to be the trend these days…

The trick for me is balance, make sure there are some vegetables, some protein and some energy (ie, fats), in this case it needed a little of both added. Some quickly fried tofu and then chopping some watercress I had left in the fridge, makes it at least look a little more balanced! A dollop of creme fresh and its done!
